Bianca is our living sourdough starter. She’s an old demanding lady who requires daily care: she needs to be fed, hydrated, and you need to understand the environment she prefers. Sometimes she gets sour, and then you have to give her a relaxing bath.
She needs to stay strong in order to release the necessary strength to leaven the dough all by herself.
Bianca is the secret behind the deliciousness of our leavened products.
Note: “Lievitati” is a term used in Italian to refer to leavened baked goods such as bread and pastries.
