Colomba is a traditional sweet, one of the most iconic of Italian Easter. Modeled in the shape of a dove, it symbolizes peace. Its amber crust is covered with a layer of amaretto glaze with almonds and powdered sugar. Cutting it reveals a golden yellow dough with a nice honeycomb structure, soft and stringy.  The notes of butter and candied oranges give the sweet a rich fragrance.
